Chile and Onion Relish

chili and onion relish

Ingredients:

15 large roasted and peeled green chilies (degree of heat—mild, medium, hot, extra hot--is up to you)

1 large white onion (these can be raw but I prefer them sauteed)

*Juice of two limes

Salt and pepper to taste

Chop the chilies and onions into cubes (a variation is to cut them into thin slices)

Put the cubes or slices, along with salt and pepper, into serving bowl.

Drizzle lime juice over the ingredients and mix

Cover and put in refrigerator for at least 8 hours so the flavors can mingle
