Gazpacho

There are a variety of ways to prepare gazpacho, depending on the types of vegetables you prefer. This is one version:

Ingredients:

3 cups pureed tomatoes (some prefer vegetable juice cocktail) or 12 fresh tomatoes with skins removed and pureed
2 tablespoons lime juice
½ cups chopped green onions
1 small green bell pepper diced
1 small zucchini, diced
*1 small cucumber, diced
1-3 small banana peppers
salt and pepper to taste

optional:
2T olive oil
dill
*garlic
salt
vinegar
parsley
basil
1 cup plain nonfat yogurt

Put all ingredients (except yogurt) into food processor or blender and mix until mixed, but still “dicey” (or chunky). Chill. Add yogurt on top if desired.
