There are a variety of ways to prepare gazpacho (a spicy soup that hails from Spain and Portugal), depending on the types of vegetables you prefer. This is a version that uses ingredients from this hemisphere:


3 cups pureed tomatoes (some prefer vegetable juice cocktail) or 12 fresh tomatoes with skins removed and pureed
½ cup chopped green onions
1 small green bell pepper diced
1 small zucchini, diced
1-3 small banana peppers
salt and pepper to taste

*2T olive oil

*half a cucumber
*1 cup plain nonfat yogurt

Put all ingredients (except yogurt) into food processor or blender and mix until mixed, but still “dicey” (or chunky). Chill. Add yogurt on top if desired.
