This is a quick and nutritious meal that kids can help you prepare, especially after cooking when they can fork out the insides.
Cut the spaghetti squash in half lengthways and scoop out the seeds.
Place onto a cookie sheet, cut side down. If you are not concerned with calories, you can rub the inside of the squash with olive oil. Bake at 350 degrees for 40 minutes or until the inside of the squash is tender. Allow squash to cool enough to handle. Use a fork to scrape the insides into what looks like short spaghetti strands (below) and put on a plate.
Mix the squash with a sauce of your choice or other vegetables. This is very good tossed with spices and herbs (black pepper, garlic, dill, oregano, etc.)
